Jello Shots

Makes approximately 16-32 shots, depending on the size of your paper souffle cups.

Jello, 3 oz box (grape, lemon and lime for Mardi Gras colors, of course!)
Water
1 cup vodka
1/4 cup Everclear grain alcohol (for the brave of heart)
5 or 6 ice cubes
Paper souffle cups in 1 ounce size

BBQ and Labor Day Weekend

BBQ SHRIMP (Serves 6)


6 pounds large shrimp, head on
1 lbs. butter, melted
10 cloves garlic, peeled and cracked open
3 lemons
2 tablespoons salt
1 tablespoons paprika
1 teaspoon cayenne pepper
2 teaspoons freshly cracked black pepper
1/4 teaspoon white pepper
1/2 teaspoon dry mustard
1/2 teaspoon dry ginger
1 tsp celery seed
1 tablespoon cardomom

All About Red Beans

Buster Holmes World Famous Red Beans and Rice (Serves 6 - 8)

1 lb. red beans
1 lb. smoked ham hock
1 onion, chopped
1 green bell pepper, chopped
Salt and pepper to taste
2 cloves garlic
1 stick margarine

Pick through beans to remove any rocks. Wash beans and cover with water. Add onion, bell pepper, ham hock and garlic. Cook on slow fire till done (about 2 hours). Add salt, pepper and margarine and cook five minutes. Serve on rice with Louisiana hot sauce and French bread and butter.
